Whenever, I mention the words "fish" for dinner, my daughter would always say "oh, okay". She's not really into fish or should say very picky towards the method of cooking, type of fish and the cut of fish. She only likes the deep-fried fish, fish cooked in sauces and SOMETIMES steam fish and they must be fillets only. Hey! Sounds just like my husband too! LOL!
Anyway, this is a great dish for kids and adults too. They are easy to prepare and cook. So, do try my Sweet and Sour Fish recipe and enjoy the rest of the day :)
Ingredients
2 ( 400 g) Slices of Snapper Fillets, cut into smaller size
1 Tbsp Soy Sauce
1 Tbsp Chinese Cooking Wine
1 Tbsp Ginger Juice
2 Red Chilies, minced
1 Small Red Pepper, cubes
1 Small Green Pepper, cubes
1 Small Red Onion, cubes
1 Small can Pineapple Chunks, reserved 100 ml of Juice
3 Cloves Garlic, chopped
6 Tbsp Corn Flour
Oil for deep frying
Sauce
5 Tbsp Ketchup
1 tsp Sugar
1 Tbsp Soy Sauce
150 ml Water + 100 ml Pineapple Juice
1/2 tsp Sea Salt
1/2 tsp Corn Flour
Method
Marinate the fish with soy sauce, Chinese cooking wine and ginger juice for about 20 minutes.
Heat the oil in a moderate heat. Coat the fish pieces with corn flour and deep-fry until light golden brown in color. Drain on paper towels.
Heat 1 Tbsp of oil and cook the garlic and red chilies on medium heat for about 3 minutes. Then turn the heat on high and mix in the peppers, onions and pineapples. Stir briefly and add the prepared sauce and bring it to a boil. Add the fried fish and mix well. Serve immediately.

Sweet And Sour Fish
