Roti Jala (Net Pancake)

Roti Jala (Net or Lace Pancake) is a light pancake, made using a special mold. If you do not have the mold, then you can lighten the batter slightly with water or milk and make them like the way you would cook crepes. I'm serving the Roti Jala with Chicken Rendang. The recipe for my Chicken Rendang will on the next post. Roti Jala also tastes great with Curry Chicken. Click here for the recipe.

Roti Jala (Net Pancake)

300 g All Purpose Flour
3 Large Eggs, lightly beaten
2 tsp Vegetable Oil
1 tsp Sea Salt
1/3 tsp Ground Turmeric
300 ml + 2 Tbsp Water
300 ml Unsweetened Soy Milk or Low Fat Milk

Combine all the ingredients and whisk until the batter is free of lumps. Strain the batter.

Fill the mold with some batter and make a few swirl around the pan. When the batter is set, flip over and cook the other side of the the pancake. Then fold them in any shape of your choice. Serve immediately.
