Stir-Fried Kung Pao Chicken

This is a yummy and zesty Kung Pao chicken dish that everyone in my house enjoys! Learn how to make it with my video tutorial. Enjoy!

Stir-Fried Kung Pao Chicken

Ingredients

2 (about 380 grams) Boneless & Skinless Chicken Breasts, cubed
3 ½ Tbsp Peanut Oil
50g Cashew Nuts, roasted
4 stalks of Scallions, cut into 1-inch segments
3 cloves of Garlic, roughly chopped
1/2 inches of Ginger, thinly sliced
1/2 tsp of Ground Sichuan Peppercorns
15 Dried Chilies, cut into 3/4-inch segments

Marinade
2 tsp Chinese Rice Wine
2 tsp Light Soy Sauce
1 tsp Dark Soy Sauce
2 tsp Corn flour
2 tsp Peanut Oil

Sauce
1 Tbsp Chinese Black Vinegar
1 Tbsp Light Soy Sauce
1 Tbsp Dark Soy Sauce
1 tsp Sesame Oil
2 tsp Sugar
2 tsp Corn flour
5 Tbsp Water

Method

Marinate the chicken cubes for about 20 minutes.

Mix together all the sauce ingredients until well combined.

Add about 1 Tbsp of peanut oil in a wok over medium heat. Toss in the cashew and stir until golden brown in color. Remove the cashew from the wok and set it aside.

Turn up the heat on high and add about 2 Tbsp of peanut in the same wok. Mix 2 tsp of peanut oil into the marinated chicken (this will help to separate the meat during stir-frying), and into the wok. Stir-fry the chicken for about 5 to 6 minutes, or until cooked. Dish out and set aside.

Mix in the remaining oil into the same wok. Then toss in the dried chilies and ground Sichuan peppercorns, and give it a quick stir. Then add the ginger and garlic and stir-fry until fragrant.

Then add the chicken, stir, and the prepared sauce. Close with a lid and bring it to a boil. Remove the lid, and give it a good stir, and add the scallions and stir again, then add toasted cashew nuts. Serve immediately with some steamed rice.

  1. Stir-fries are a delight. Chop til you drop the night before or off and on during the day. Then - bingo - dinner is on the table in 5 minutes.

Dumplings

I'm actually laughing at myself! What have I got into? Trying to make dumplings?? Well, I have seen my late grandmother make them a long time ago. I can remember the ingredients but not the measurements! So, it took me about two hours to come up with the perfect recipes, and I'm glad I did! It was an instant hit! They were all gone, all gobbled up! Make the dough first, add about 480 to 500g of all-purpose flour with 300ml of water. Knead the dough and let it rest. You should be able to make 40 dumplings with the dough. Meanwhile, prepare the filling for the dumplings. Click here for the dumpling wrappers video.
