Crunchy Rice Crackers



These are gluten-free rice crackers. They are made from glutinous rice and great for snacking. You can enjoy it as it is or dip into chocolate sauce, peanut butter, Nutella, or brush them with some light soy sauce for the savory option. You can even make the cracker thinner, or different shape and sizes.





Crunchy Rice Crackers

Ingredients

3 Cups of Glutinous Rice
Vegetable Oil, for deep-frying

Method

Soak the rice for 2 hours. Drain the rice and place in a steamer and steam for about 25 to 30 minutes on high heat. Transfer the rice into a mixing bowl.

Shape the rice: Line a baking tray with parchment paper. Place a baking ring or a cookie cutter on the baking tray. Spoon some rice in the cookie cutter, lightly compact the rice with the back of a spoon. Continue the process with the remainder steamed glutinous rice.

Then dry the shaped rice under the sun for 1 to 2 days or until it’s very dry and crispy.
To fry the rice crackers: Heat enough vegetable oil over high heat. Fry the rice cake until it puff up and float. Then turn over and fry the other side. Remove the rice crackers and drain on paper towel. Let it cool completely before serving.

Dumplings

I'm actually laughing at myself! What have I got into? Trying to make dumplings?? Well, I have seen my late grandmother make them a long time ago. I can remember the ingredients but not the measurements! So, it took me about two hours to come up with the perfect recipes, and I'm glad I did! It was an instant hit!
