Pineapple Sorbet

The current warmer weather in Vancouver just got me craving for some frozen treats! So it was about time I started to utilize the ice-cream maker attachment which I purchased some time back. It works with my KitchenAid mixer. I have many recipe books with mouthwatering frozen treats; but, the one I like best is "The Perfect Scoop" by David Lebovitz. I have tried several recipes from this book. I must admit they were simply superb! So, I'll be sharing some of the recipes with you in the near future. Hope you'll find time to whip out some frozen treats for your family or friends.

Recipe adapted from The Perfect Scoop by David Lebovitz

Pineapple Sorbet

Ingredients

1/2 Pineapple, peeled and cored (2 cups, 500 ml puree)
8 to 10 Tbsp (100 to 130 g) Sugar
1/2 Cup (125 ml) Water

Method

Cut the pineapple into chunks and puree in a blender with 8 Tbsp (100 g) sugar and the water until smooth. Taste, then add up to 2 Tbsp additional sugar, if desired.

Allow the mixture to chill thoroughly, then freeze it in an ice cream maker.

Note: Makes about 3 cups (750 ml)

  5. This looks great. It's starting to warm up here in Arkansas so I'm thinking that something easy like a sorbet is on the menu pretty soon. Surely it's not too big of a jump to go from pineapple sorbet to something with more of a pina colada flavor to it?

    Nummy!

  9. @Jessica604: "Creamy-looking sorbet" is the exact word! Coconut milk-inspired desserts sound delicious.

@Cindy Khor: I like mango sorbet too. In fact, just made them couple days ago. Yummy :)

@LazySumo: That's exactly what I did! Start with sorbet then ice cream. Pina Colada? (just add coconut milk & rum)

@Chris: Ha! I have the same problem too! Was debating whether to get the attachment or an ice-cream maker.

Dumplings

I'm actually laughing at myself! What have I got into? Trying to make dumplings?? Well, I have seen my late grandmother make them a long time ago. I can remember the ingredients but not the measurements! So, it took me about two hours to come up with the perfect recipes, and I'm glad I did! It was an instant hit! They were all gone, all gobbled up! Make the dough first, add about 480 to 500g of all-purpose flour with 300ml of water. Knead the dough and let it rest. You should be able to make 40 dumplings with the dough. Meanwhile, prepare the filling for the dumplings. Click here for the dumpling wrappers video.
