Pulut Tekan (Pulot Tai Tai)



Steamed Glutinous Rice With Coconut Jam or Pulut Tekan (Pulut Tai Tai) is another popular teatime snack in Malaysia and Singapore. This dessert is rich with coconut infused glutinous rice and the natural blue color of Butterfly Pea flowers or Bunga Telang as known locally. It is served with some coconut jam.





Pulut Tekan (Pulot Tai Tai)

Ingredients

400g Glutinous Rice, rinsed
20 Dried Bunga Telang/Butterfly Pea Flowers
200ml Coconut Milk
50 ml Water
1 tsp salt
4 Pandan Leaf/Screw-Pine Leaf,
Coconut Jam/Kaya
Some Banana Leaf

Equipment: 8 inches Baking Tin Lined With Banana Leaf
A Cut-Out Cardboard wrapped in tin foil
Heavy object (pestle & mortar)

Method

Blue Colour Rice: Soak picked dried Bunga Telang with 1/2 cup of boiling water. Let it rest for about 10 to 15 minutes. Drain and soak 100 grams of rinsed glutinous rice, overnight.

Uncoloured Rice: Soak 300 grams of rinsed glutinous rice with some water, overnight.

Mix coconut milk with salt, water and set aside.

Drain both rice separately. Place them in a baking tin. Drizzle 200 ml coconut milk mixture all over the rice. Top with Pandan leaf and place in a steamer. Steam on high heat for about 20 minutes.

Fluff the rice and drizzle the rest of the coconut mixture and steam for another 10 minutes.

Remove from the steamer and discard the Pandan leaf. Mix the rice together with a pair of chopstick. Press the rice evenly with a spatula. Cover with banana leaves. Then ft in the cardboard and place a heavy object on top for 3 to 4 hours. Cut into desire sizes and serve with Kaya.

Hasselback Potatoes

Ingredients

6 Medium Size Potatoes
2 - 3 Cloves Garlic, thinly sliced
2 Tbsp Olive Oil
30 g Butter
Maldon Sea Salt
Freshly Ground Black Pepper

Method

Preheat the oven to 220˚C (425˚F). Put the potato on a chopping board, flat side down. Start from one end of the potato, cut almost all the way through, at about 3 to 4 mm intervals.

Arrange the potatoes in a baking tray and insert the garlic in between the slits. Scatter some butter on top of each potato. Then drizzle the olive oil and sprinkle some sea salt and freshly ground black pepper.

Dumplings

I'm actually laughing at myself! What have I got into? Trying to make dumplings?? Well, I have seen my late grandmother make them a long time ago. I can remember the ingredients but not the measurements! So, it took me about two hours to come up with the perfect recipes, and I'm glad I did! It was an instant hit! They were all gone, all gobbled up!

Make the dough first, add about 480 to 500g of all-purpose flour with 300ml of water. Knead the dough and let it rest. You should be able to make 40 dumplings with the dough. Meanwhile, prepare the filling for the dumplings. Click here for the dumpling wrappers video.
