This is a fantastic condiment, and it's very easy to prepare. It's usually served together with fried or curries dishes.
Acar Nenas dan Timun (Pineapple & Cucumber Pickle)
Ingredients
1/4 piece of a Pineapple, cut into smaller pieces
3 Small Cucumber, cut into sticks (about 1 to 1 1/2 inches)
1 Carrot, cut into sticks (about 1 to 1 1/2 inches)
3 Shallots, thinly sliced
2 Red Chilies, sliced
Dressing
1/2 Cup White Vinegar
1/4 Cup Sugar
1 tsp Salt
Method
Dressing: Dissolve sugar and vinegar. Add salt and let it cool completely.
Combine pineapple and vegetables with vinegar mixture. Store in the fridge for at least 2 to 3 hours before serving.
