Kaya Puff (咖椰角)

This is a traditional-style Kaya Puff, or Kaya Kok, made with pure lard and filled with homemade coconut jam (kaya).

It's a popular Chinese snack in Malaysia and one of my childhood favourites as well. If you're not keen on lard, substitute it with either vegetable or peanut oil, or a combination of soften butter and oil.

Dough #1
1 Cup (128 grams) All-Purpose Flour
2 1/2 Tbsp (30 grams) Lard or Shortening
1 Tbsp Sugar
4 to 5 Tbsp Water
A Pinch of Salt

Dough #2 (Oil)
3/4 Cup (100 grams) All-Purpose Flour
4 Tbsp (50 grams) Lard or Shortening
