Amber's Potato Salad

Today, I'm posting a simple and yet so delicious salad, Amber's Potato Salad. I guess, you might be wondering where did the beautiful name AMBER came from? Well, the name Amber is my lovely daughter. This particular salad is her ideal ingredients for a potato salad. So, refreshing and satisfying too! Enjoy:)

Amber's Potato Salad


800 g Yukon Gold Potato, boiled and thickly sliced
1 Red Bell pepper, diced
1 Jalapeno Pepper, finely chopped


5 Tbsp Extra Virgin Olive Oil
4 Tbsp Freshly Squeeze Lemon Juice
Sea Salt to taste
Some freshly ground black pepper


Prepare the dressing. Combine the olive oil, lemon juice, sea salt, pepper and whisk and blend until emulsified.

Toss the potatoes with the lemon juice dressing, jalapeno peppers and black pepper. Serve immediately.

  4. My boyfriends daughter is called amber! She doesn't like the mayonaise of traditional potato salad, but she adores potatoes, and red pepper is her favourite food! I think she may love this as much as your daughter =] xx

I'm actually laughing at myself! What have I got into? Trying to make dumplings?? Well, I have seen my late grandmother make them a long time ago. I can remember the ingredients but not the measurements! So, it took me about two hours to come up with the perfect recipes, and I'm glad I did! It was an instant hit! They were all gone, all gobbled up! Make the dough first, add about 480 to 500g of all-purpose flour with 300ml of water. Knead the dough and let it rest.
