Flat-Rice Noodles Soup With Chicken And Prawn (Kai See Hor Fun)



This dish is known as Flat-Rice Noodles Soup With Chicken And Prawn or Kai See Hor Fun in Malaysia. It's also famously known as Ipoh Sar Hor Fun. The rice noodles from Ipoh boast to be the best in Malaysia because of its silky-smooth texture. I have to concur on that score. The soups are made with chicken and fried prawn shells and are naturally sweet. It is delicious, warming and wholesome.

Flat-Rice Noodles Soup With Chicken And Prawn (Kai See Hor Fun/Kway-Teow Soup)

Ingredients

2 lbs Prawns/Shrimps, shelled (reserved)
2 lbs (2 to 3 pieces) Chicken Fillet Breasts
2 lbs Fresh Flat- Rice Noodles (Hor Fun)
2 to 3 Cups Bean Sprouts
100 g Chives, washed and cut into smaller segments
6 Stalks of Scallions, chopped
3 to 4 Fresh Red Chilies, sliced
Some Light Soy Sauce
1/2 Cup Crispy Fried Shallots
Peanut Oil

Soup Base
2 to 3 (1.5kg/3 lbs) Chicken Carcasses,
18 Cups of Water
2 Tbsp Whole White Peppercorns, place in a spice bag
50 g Rock Sugar, or to taste
2 tsp Sea Salt, or to taste
1 lb Shrimp/Prawn Shells

Method

Scald the chicken carcasses with hot water to clean. Place the chicken carcasses, water and peppercorns in a large pot and bring to a boil. Lower the heat and simmer for about 2 hours.

Heat about 6 tablespoons of peanut oil in a wok or saucepan over high heat. When the oil is hot add all the shrimp shells. Stir-fry and cook until golden brown in color, about 15 to 20 minutes. Then strain the shells and place it in the chicken broth, and reserved the oil. Bring the broth to a boil and simmer for about 30 minutes. Then place the prawns in the broth. When the prawns turn pink, remove and set aside. Then add chicken breast and cook for about 20 minutes. Once the chicken is fully cook, remove and chop or shred the chicken.

Strain the soup into a clean pot. Then season with rock sugar and salt.

To serve: Bring a pot of water to a boil. Blanch a portion of flat-rice noodles, bean sprouts , chives, and place it in a bowl. Ladle some hot soup and garnish with shrimps and chicken meat. Top with scallion , crispy fried shallots, and drizzle a little bit of shrimp oil. Serve with some red chilies in light soy sauce.

Dumplings

I'm actually laughing at myself! What have I got into? Trying to make dumplings?? Well, I have seen my late grandmother make them a long time ago. I can remember the ingredients but not the measurements! So, it took me about two hours to come up with the perfect recipes, and I'm glad I did! It was an instant hit!
