Phở Gà - Chicken Noodle Soup



“Pho (pronounced ‘fir’) is the quintessential Vietnamese dish, traditionally made with beef broth but there are many variations too. Here, I have a recipe for Pho Ga or Chicken Noodle Soup. This delicious herby soup takes a while to make, but, with very little effort though. Try this easy soup noodle recipe and serve with a plate of fresh herbs, chopped chili, and slices of lime on the side.

Phở Gà - Chicken Noodle Soup

Ingredients

2 Recipes of Homemade Thick Rice Noodles, or 300 g Flat-Rice Noodles (cooked as per manufacturer’s instructions)
2 Pieces Skinless and Bone-In Chicken Breasts, blanched
Bean Sprouts, lightly blanched
1 Large White or Yellow Onion, peeled and thinly sliced
Asian/Thai Basil
Fresh Coriander Leaves
Red or Thai Chilies, sliced
Chopped Scallions
Some Kaffir Lime Leaf, finely sliced
Lime Wedges

Soup Base
800 grams Chicken Carcass or Legs, blanched
8 to 10 Cups Water
1 Yellow Onion, charred
1 Piece Ginger (about 2 ½ inches), halved, charred
1 Small Daikon, optional
2 Star Anise, toasted
1 to 2 Whole Cloves, toasted
1 Pc Cassia Bark, toasted
1 Tbsp White Peppercorns, toasted
1 Tbsp Fish Sauce, to taste
1 Tbsp Cane or Rock Sugar, to taste
Sea Salt, to taste

Method

Make the soup base; Combine the chicken bones and legs, onion, ginger, daikon (if using), star anise, cloves, Cassia bark, and peppercorns, in a large stockpot. Bring the stock to a boil, lower the heat, skimming frequently, and simmer for 1 to 1 1/2 hours. Then add chicken breast, simmer until fully cooked (about 20 minutes). Remove the chicken and set aside to cool down before shredding it by hand or chop it into bite-size pieces.

Strain the stock into another pot and mix in the fish sauce, cane or rock sugar, cover with a lid and keep on gentle simmer over low heat.

To serve; divide the cooked rice noodles among 4 bowls. Top each with the broth, chicken meat, herbs, bean sprouts, onion, scallions, chilies, lime wedges, and some fish sauce, if desired.

  5. What a great soup! Pho is one of our favourite dishes to get when eating out. I've tried making it at home once... and I'll have to try at least once more to make this recipe! The chicken variation of this recipe sounds delicious!

    (Also, I'm surprised to see that it is pronounced as "fir," I was told to pronounce is as "fa," a dialect issue maybe?)

Hasselback Potatoes

Ingredients

6 Medium Size Potatoes
2 - 3 Cloves Garlic, thinly sliced
2 Tbsp Olive Oil
30 g Butter
Maldon Sea Salt
Freshly Ground Black Pepper

Method

Preheat the oven to 220˚C (425˚F). Put the potato on a chopping board, flat side down. Start from one end of the potato, cut almost all the way through, at about 3 to 4 mm intervals.

Arrange the potatoes in a baking tray and insert the garlic in between the slits. Scatter some butter on top of each potato. Then drizzle the olive oil and sprinkle some sea salt and freshly ground black pepper.

Bake the potatoes for about 40 min…

Dumplings

I'm actually laughing at myself! What have I got into? Trying to make dumplings?? Well, I have seen my late grandmother make them a long time ago. I can remember the ingredients but not the measurements! So, it took me about two hours to come up with the perfect recipes, and I'm glad I did! It was an instant hit! They were all gone, all gobbled up!

Make the dough first, add about 480 to 500g of all-purpose flour with 300ml of water. Knead the dough and let it rest. You should be able to make 40 dumplings with the dough. Meanwhile, prepare the filling for the dumplings. Click here for the dumpling wrappers video.
