Couscous Salad

This couscous salad does not require any cooking at all. All you need to do is to do some chopping and mixing them up. I like to serve this salad with a simple roast chicken, especially during the weekend. Just pop the chicken in the oven and prepare the salad. Then a beautiful dinner will be ready in no time. There is an easy recipe for roast chicken over here. Enjoy!

Couscous Salad

Ingredients

1 Cup Instant Couscous
1 Cup Warm Water

Dressing
3 Tbsp Lemon Juice
2 Tbsp Hazelnut Oil
2 Tbsp Extra Virgin Olive Oil
1 tsp Sea Salt
1 tsp Freshly Ground Black Pepper

2 Roasted Red Bell Peppers (store-bought), chopped
2 Tomatoes, diced
1/2 of Red Onion, diced
1 Red Chili, chopped
1 Tbsp Hazelnut Oil
1 tsp Pomegranate Vinegar or Red Wine Vinegar
3 Tbsp Chopped Parsley
1 clove Garlic, finely chopped

Method

Combine and whisk all the dressing ingredients and pour into the couscous. Stir well and add in the water. Set aside until all the couscous absorbs all the dressing and water.

Then combine the rest of the ingredients and mix into the couscous mixture. Mix until well combined and season with sea salt, black pepper and top it with some parsley. Serve immediately.

Dumplings

I'm actually laughing at myself! What have I got into? Trying to make dumplings?? Well, I have seen my late grandmother make them a long time ago. I can remember the ingredients but not the measurements! So, it took me about two hours to come up with the perfect recipes, and I'm glad I did! It was an instant hit! They were all gone, all gobbled up!

Make the dough first, add about 480 to 500g of all-purpose flour with 300ml of water. Knead the dough and let it rest. You should be able to make 40 dumplings with the dough. Meanwhile, prepare the filling for the dumplings. Click here for the dumpling wrappers video.
