I made some tropical fruits salsa using an array of fresh frozen fruits. It’s simple and yet refreshing, especially ideal for the sweltering whether we have had in Vancouver recently. I served them with the chicken kebabs and grilled jumbo prawns which I had grilled earlier. The frozen fruits will defrost nicely with the dressing and they should be served chilled. Enjoy.
Tropical Fruits Salsa
Ingredients
1 Packet (600 g) Frozen Tropical Fruits Blend, diced
1 Big Lime, juiced
1 Serrano Chili, minced
1 Red Chili, minced
3 Tbsp Extra Virgin Olive Oil
4 Tbsp Orange Juice
1 tsp Ground Cumin
3 Tbsp Cilantro, chopped
Sea Salt to taste
Some Freshly Ground Black Pepper
Method
Combine all the ingredients in a large bowl. Serve chilled.
