After baking the cake this morning, I went to check out the organic meat shop near my neighborhood. I bought a medium size chicken and decided to make Hainanese Chicken Rice for dinner.
First, I marinate the chicken with ginger juice, honey, soy sauce, sea salt and five spice powder. Then roast the chicken for about 50 minutes. The rice is cooked with chicken broth, ginger, garlic, Pandan or Screwpine Leaves and season with sea salt. When the rice is cooked, I shaped them into a ball. I served the chicken rice with chili sauce, dark soy sauce and some chicken broth with soft tofu. The chicken rice is so addictive and I think we all ate too much.
