Avocado BLT With Fried Egg And Chipotle Aioli

Avocado BLT With Fried Egg And Chipotle Aioli

8 Slices of Sourdough Bread, toasted with unsalted butter
Chipotle Aioli
Green Leaf Lettuce, rinsed and dried
1 Beefsteak Tomato (or any variety) sliced
12 oz (12 strips) Cooked Smoked Thick Center-Cut Bacon
4 Fried Eggs
1 Firm and ripe Avocado, sliced thickly

Chipotle Aioli
5 Cloves of Garlic, peeled
¼ Cup Olive Oil
2 Chipotle (from can/tin) with a little sauce
1 Egg Yolk
1 tsp of Freshly Squeezed Lime Juice, or to taste
Sea Salt
Freshly Ground Black Pepper

Chipotle Aioli: In a small saucepan, over low heat, cook the olive oil and garlic for about 10 minutes, or until the garlic is softened and light golden brown in color. Remove the garlic and let the oil cool slightly.

Put the garlic, chipotle, egg yolk, a little salt, and a few grinds of pepper in the bowl of the processor fitted with the steel blade and blend well. With processor running, add the reserved oil in a thin, steady stream. When the aioli is emulsified and all the oil has been absorbed, scrape it into a bowl and adjust the seasoning to taste with salt, pepper, and lime juice.

To assemble the sandwich: Spread some chipotle aioli generously over one side of each slice of toasted bread. Top with lettuce on half the bread slices, tomato, bacon, fried egg, and avocado. Cover with the other slice of bread. Press the sandwich firmly, cut into half and serve immediately.

Makes 4 BLT

  1. oh yum! sounds like the perfect breakfast. any tips on making aioli without a food processor? love that plate, btw.

  2. @joey armstrong: Well, you can mash or finely chop the garlic and Chipotle. Then use a whisk to beat in the egg yolk, and continue to beat in the oil in a thin stream until the aioli is emulsified.

  3. mm very neat cut sandwiches. the fillings tend to squish out when i cut in half like that...

  4. I am adding this to my sandwich rotation! I love fried egg on anything really, and could totally justify having this for breakfast.

  5. Chipotle aioli is divine. And so are fried eggs on sandwiches. And the same goes for avocado. You have a real winner here!!

  6. The perfect weekend brunch item! Can't wait to try this.

  7. It looks as though you have the same problem I do when it comes to BLT's. I can't remember the last time I had a BLT. By the time I get the sandwich all put together it's more like a BLTCTASC (Bacon, Lettus, Tomato, Cheese, Turkey, Avacodo, Sprouts & Cucumber. Oh and don't skimp on on the lemon basil mayo.)

  8. Oh my word, that is like heaven!! Seriously that might very well become my most favorite sandwich in the world and I haven't even tried it yet! haha. Congrats on the Top 9! I saw this and just HAD to come over and see this for myself

  9. Great flavor combinations! I'm all about easy meal ideas for the summer months!

  10. fantastic recipe. love any sandwich with a fried egg in it.

i'm gonna try that chipotle aioli sauce this weekend. mmmmmmmmm

  11. Made this sandwich this afternoon. So, so yummy. I packed in on a picnic and ate it with berries and two other people who enjoyed it just as much. Certainly going to make it again.

  12. OMG this looks so good. I'm such a sucker for toasted sandwiches and aioli.

  13. Hey, this sandwich was awesome! Totally made a mess out of my kitchen (not your fault, but's very important to use every dish when you're trying to cook something) This sandwich should come with a warning though, you WILL need a napkin, it's so so good you can't be bothered to eat it like an adult human being! Thanks for posting! ❤️

I'm actually laughing at myself! What have I got into? Trying to make dumplings?? Well, I have seen my late grandmother make them a long time ago. I can remember the ingredients but not the measurements! So, it took me about two hours to come up with the perfect recipes, and I'm glad I did! It was an instant hit! They were all gone, all gobbled up! Make the dough first, add about 480 to 500g of all-purpose flour with 300ml of water. Knead the dough and let it rest. You should be able to make 40 dumplings with the dough. Meanwhile, prepare the filling for the dumplings. Click here for the dumpling wrappers video.
